Dandelion Noodles

Introduction:

Not weeds! Dandies are nutritious and delicious. Be sure to gather young leaves, as they will be less bitter. Also remember to be sure you aren't pulling from any ground that you put chemicals on. Safety first!



Ingredients:


  • 2 cups of washed and dried dandelion greens. You want ones not from a chem treated yard, and you want the younger leaves (less bitter than adult leaves).
  • 2 eggs
  • 1/2 tsp salt
  • 1 - 1 1/4 cups flour

Equipment:


  • Baking Sheet
  • Food Processor
  • Rolling Pin
  • Pizza Cutter (Or knife to cut the noodles to shape)
  • Wax Paper
  • Noodle Pot
  • Stirring Utensil



What to do:


Step 1: In food processor, combine all ingredients. When adding flour, do so a bit at a time (I like to add in thirds). Pulse process until combined.

Step 2: Turn out dough onto floured surface and knead with floured hands until firm and smooth.

Step 3: With a floured rolling pin, roll dough as thing as possible onto an area covered in wax paper. The noodles will puff up during cooking, so as thin as you can get it is best. Learn from my failure and use the wax paper so you aren't in a state of misery trying to dislodge the noodles from your counter.

Step 4: Let the rolled dough dry for about an hour.

Step 5: Cut noodles into desired shape. Here, I am using a pizza cutter to make linguini-like noodles. Try for as uniform as possible.

Step 6: Peel noodles from wax paper and have them ready.

Step 7: Salt your water for cooking the pasta and bring to a boil.

Step 8: Add noodles and lower temp to cook over medium for 3-5 minutes.

Step 9: Drain noodles, and use in your preferred dish. Don't forget your favorite sauce!

Variations:


Instead of Dandelions, you can substitute spinach, carrots, or even beets! A great way to add veggies to your meal, incognito!

You are limited only by your imagination. This recipe is sure to turn heads and pack a powerful vitamin punch!
